Ghanaian Pancakes

My favorite recipe for making one of my favorite foods. Growing up in Ghana these pancakes made an appearance almost every morning. It’s simple and very easy to make.

Bon Apetit

Ingredients:

  • 1 cup flour

  • 3/4 cup milk

  • 1/4-1/3 cup sugar

  • 3 eggs

  • 1/8 cup melted butter

  • 1/2 teaspoon vanilla flavor

  • 1/8-1/4 teaspoon nutmeg

  • 1/4 cup oil optional

Recipe

The Batter:

  • Mix flour, sugar, nutmeg and salt; make sure to reduce sugar and salt clumps to tiny fractions. Set aside.

  • In a separate large bowl, beat eggs and milk together. I accomplished this by hand but a mixer will work as well.

  • To the flour bowl, add in egg mixture until everything has been incorporated .

  • Finally add in melted butter.Stir/whisk entire mixture.

To Fry:

  • Heat a skillet or a non stick frying pan then lightly coat the hot pan with: vegetable oil, cooking spray, or clarified butter.

  • Then pour about a 1/2 cup of batter depending on your fry pan or skillet. Tilt pan so the batter spreads across the bottom of the pan creating a circle.

  • Cook the pancake for about 2 minutes, until the bottom is golden or light brown.Lift with a spatula, turn and cook the other side.
