Sweet Potato Bites with Steak and Peppers
An easy and quick recipe for a delicious meal.
What you need-Ingredients:
2 large sweet potato diced into squares
1 tsp salt
1 lb flat iron steak diced into 1" pieces
3 tbsp oil divided-olive preffered
2 cloves garlic minced
2 bell peppers seeded and diced into squares
4 green onions thinly sliced
2 tsp cracked black pepper
2 tbsp fresh chopped cilantro
Instructions:
After dicing your potatoes, place them in a microwave safe bowl . Cover with a plate and microwave for 3-6 minutes on high. You will want to stir halfway through the total time. The purpose of this step is to soften the potatoes—- but you do not want to overcook them.
Heat a skillet on the stove on medium to high heat. Add the 2 tablespoons olive oil and heat. Proceed to cook the steak until preffered tenderness/at least 10 minutes.
Empty the skillet of beef and juices. Add the third tablespoon olive oil to the skillet. Add the sweet potatoes, toss to cook until browned, stirring occasionally, until browned, 3-4 minutes. You may add the steak juices to this step.
Make a well in the center of the pan and add the garlic. Sautee, stirring occasionally, about 1 minute.
Add the bell pepper and scallions now to your skillet with potatoes. You will want to sautee, until your bell peppers are a bit tender, 3-4 minutes.
Add the steak and juices back to the pan. Toss all ingredients and cook an additional 1- 2 minutes or until the liquid has evaporated.
Add the black pepper and cilantro, toss, and remove from heat.
